NEBESA Chalets: HIŠA FRANKO, GASTRONOMIC WONDER OF THE SOČA VALLEY
Hiša Franko first made it onto the list of the World’s 50 Best Restaurants in 2017, but its legacy dates back over half a century when Franko Kramar served his famous roast beef and frika at the inn. In June 2020, when the first edition of the Michelin Guide for Slovenia was released, Hiša Franko received two Michelin stars and a green star. As of September 2023, they proudly boast three Michelin stars and a green star.
The story and philosophy of Hiša Franko are closely tied to the traditions and environment of the Soča Valley. Nestled at the foothills of the towering mountains and high pastures and just a stone’s throw from the emerald Soča River, the restaurant builds its cuisine on the best nature offers in each season.
Hiša Franko is deeply connected with the local communities of foragers, mushroom hunters, shepherds, cheesemakers, hunters, and fishermen. Moreover, it has familial ties with Nebesa Chalets: Chef Ana Roš is the sister of Maja Roš Kanellopulos, who runs Nebesa Chalets with her husband Samo. Today, most guests of Nebesa Chalets are also guests of Hiša Franko. Their joint boutique experience, “7 Stories and Flavors of the Roš Sisters”, is a rich sensory journey and a unique tribute to the Soča Valley.
